Default Mushy Lima Beans

If you like dried lima beans here's my recipe for a tasty morsel.

Place the contents of a one pound bag of dry large lime beans in a large pan, cover with plenty of water and bring to a hard boil. Pour off the water. The hard boil should swell the beans to a large size. Cover the beans with water. Chop one large onion into small pieces and add to beans. Cut plenty of ham into small pieces and add to beans. I use a ham steak. Season with salt and pepper. Don't over salt. Let contents simmer for two or three hours. Keep plenty of liquid on beans so the end result is a soupy mix. It's not as good as Spanish Bean Soup but it is mouth watering. It's good anytime but always tastes better in the winter. Cornbread goes good with the beans but I'm usually too lazy to fix the cornbread. Enjoy.
